Foods for March 2-8

This food sharing thing sounded so neat, I really wanted to participate.  It has been a recent goal of mine to start preparing healthier foods for my family and get back to goodness and nourishing our bodies with things that will be good for them.

Well, I think I pretty much failed this week.  It was a really rough week in our house with various doctors appointments every single day.  With my hubby being gone right now, there is no one else to pick up the slack when I am exhausted.  Methinks it's time to teach Hannah how to cook more.  Her cooking resume includes only cold cereal, frozen waffled, brown and serve rolls and sandwiches.  My poor child is accident prone though and putting in front of a stove frightens me.

Anyway, much to my dismay, we ate some pre-packaged foods this week and some easy to fix and not so healthy things.  I am hoping this week I can prepare something that is blog worthy, but for now, I guess this is better than nothing.

Monday
We do "order out nights" once a week while my husband is away.  It is the one day I don't end up thinking, crud, what do I make tonight?  It is my "night off" so to speak.  We order out from our favorite deli place, Jason's Deli.  They use fresh ingredients, sometimes organic, and have healthful selections.  Our favorite thing to get, girls included are salads.

So here is my favorite Jason's Deli Salad.  It has organic field greens, grilled chicken breast, feta cheese, apples, dried cranberries, golden raisins, grapes and pumpkin seeds.  I like to top mine off with a fat-free cranberry vinaigrette.

Thursday
Thursday nights are another busy one, as we have to eat early, get everyone bathed early and everything laid out for homeschool co-op the next day and get to bed a decent hour to get up early.  This was another cheat night.  I made a frozen lasagna.  I know it is not healthy, and I  know it is not full of good for us stuff, but for now, I suppose it's better than cold cereal.  The girls absolutely love it, I can guarantee everyone will eat it, and while it isn't as ideal as homemade, it still gave my girls a warm feeling and full bellies.  We had mozzarella garlic bread on the side and pizzelle cookies for dessert.

Saturday
This was another quick and easy and not so great concoction.  Just some spiral pasta tossed with some veggies and some garlic butter and herbs.  This was actually just my dinner.  I didn't cook a family dinner this night.  Hannah was vomiting all morning and I don't like to make big meals when a girl is sick and she can't enjoy.  The sisters didn't want to eat something Hannah couldn't eat too, so they all agreed on waffles and yogurt (at least the yogurt was organic!).
